Banana Buckwheat Pancakes with Miso Caramel

Start your day with the ultimate gluten-free banana buckwheat pancakes. Topped with the sweet-salty goodness of miso caramelized bananas, they make for a healthy yet delicious breakfast!

These banana buckwheat pancakes have been my go-to brunch recipe for years. I do not personally follow a gluten-free diet. However, I love experimenting with different GF flavours in baking. In many cases, I surprise myself by finding gluten-free alternatives that work even better than all-purpose flour!

This is definitely the case for these buckwheat banana pancakes. The nutty, earthy flavour of buckwheat works really well in pancake form, particularly when paired with the sweetness of banana.

Whether you are gluten-free or not, I’d urge you to give this recipe a go!

How to make Banana Buckwheat Pancakes

MAKE BUCKWHEAT PANCAKE BATTER: In a medium bowl, mash bananas to get as many lumps out as possible. Whisk in milk and egg, followed by buckwheat flour, baking powder, salt and cinnamon until combined.

COOK BUCKWHEAT PANCAKES: In a large frying pan, melt butter over medium heat. Once melted, pour in 1/4 cup of batter at a time, fitting as many pancakes as you can in your frying pan. Cook for a few minutes until bubbles form on surface, then flip and cook for another few minutes until pancakes are cooked through.

MAKE MISO CARAMELIZED BANANAS: Melt butter in an ovenproof pan over medium heat. Whisk in maple syrup and miso paste until smooth. Take pan off heat, then add in banana halves, brushing both sides with miso caramel then placing bananas face up in pan. Place pan under grill for 5-8 minutes, until bananas turn caramelized and golden on top.

BANANAS: Use ripe bananas for this recipe as they will be sweeter and mash down more easily.

MILK: You can use whatever dairy or non-dairy milk you fancy. I use oat milk.

BUCKWHEAT FLOUR: You can buy buckwheat flour off Amazon or from the health section of some supermarkets. I’d recommend Bob’s Red Mill buckwheat flour.

BUTTER: Substitute for vegan butter to make pancakes dairy-free.

MISO PASTE: Miso paste varies a lot in strength and taste. For this recipe I’d recommend light/ white miso paste.

Are these Buckwheat Pancakes completely Gluten-free?

Yes, these buckwheat pancakes are naturally gluten-free. Despite its name, buckwheat does not actually contain any wheat- it’s actually a fruit seed. Buckwheat is often referred to as a superfood as it’s packed with protein, fibre, antioxidants and minerals.

Can you make these Buckwheat Pancakes vegan?

I haven’t tested making buckwheat banana pancakes without the egg, so I cannot guarantee the result. If you want a similar plant-based recipe, I’d recommend trying these vegan banana fritters instead.

Serving suggestions for Gluten-free Banana Pancakes

I top my banana buckwheat pancakes with coconut yogurt, toasted almonds and coconut and the remaining miso caramel leftover in the pan from the caramelised bananas!

  • 2 medium, ripe bananas
  • 1 cup milk of choice
  • 1 egg
  • 2/3 cup buckwheat flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • Butter, for frying

Miso caramelised banana

  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1/2 tbsp miso paste
  • 2 bananas, peeled and halved lengthways

Instructions

  2. In a large frying pan, melt 1 tbsp butter over medium heat. Once melted, pour in 1/4 cup of batter at a time, fitting as many pancakes as you can in your frying pan.
  3. Cook for a few minutes until bubbles form on surface, then flip and cook for another few minutes until pancakes are cooked through and golden on each side. Repeat with remaining batter.

MISO CARAMELIZED BANANAS:

  1. Preheat grill. Melt butter in an ovenproof pan over medium heat. Whisk in maple syrup and miso paste until smooth. Take pan off heat, then add in banana halves, brushing both sides with miso caramel then placing bananas face up in pan.
  2. Place pan under grill for 5-8 minutes, until bananas turn caramelized and golden on top.

TO SERVE:

  1. Top pancakes with miso caramelized banana and other toppings of your choice.
