If you’re a fan of bounty bars, you are going to love these bounty overnight oats! Coconut overnight oats are topped with a rich chocolate ganache, making for a delicious breakfast.

I’ve been on a real buzz of making dessert-inspired overnight oats lately. It started off with my delectable tiramisu overnight oats. Then there was my banoffee overnight oats. Now, we have these overnight oats inspired by my childhood favourite chocolate bar!

Growing up, bounty bars were always my go-to chocolate bar to sneak into the shopping trolley. Chocolate and coconut are always a winning combination. This is why I knew I needed to make overnight oats using this delicious pairing.

How to make Overnight Oats: Bounty Flavour

These bounty-inspired overnight oats are so easy to make, and come together in two simple steps!

  1. Combine rolled oats, coconut milk, desiccated coconut, maple syrup and vanilla essence in a glass or jar.

2. In a small bowl, mix together melted coconut oil, cocoa powder, maple syrup and vanilla essence. Pour over the top of overnight oats, cover and refrigerate overnight (or for a minimum of 4 hours).

Ingredients for Bounty Overnight Oats

ROLLED OATS: You can use rolled oats, whole oats or even oat flour, depending on the texture you wish to go for. My preference is rolled oats.

COCONUT MILK: Use full-fat coconut milk for the richest, most coconutty flavour!

DESICCATED COCONUT: You could also use fresh shredded coconut instead of desiccated coconut if you really want to take these to a new level.

MAPLE SYRUP: Feel free to substitute for your preferred sweetener and adjust the quantity depending on how sweet you like your overnight oats.

COCONUT OIL: Make sure you melt the coconut oil before using. You could also use coconut butter instead for an even more coconutty flavour.

COCOA POWDER: I would recommend using a high-quality, dark cocoa powder for the richest flavour. Cacao powder will also work.

Ingredients

Coconut overnight oats

  • 1/3 cup rolled oats⁣⁣
  • 2/3 cup coconut milk⁣⁣
  • 2 tbsp desiccated coconut⁣⁣
  • 2 tsp maple syrup⁣⁣
  • 1/2 tsp vanilla essence ⁣⁣

Chocolate ganache

  • 1 tbsp melted coconut oil⁣⁣
  • 1/2 tbsp cocoa powder⁣⁣
  • 1 tsp maple syrup⁣⁣
  • 1/2 tsp vanilla essence⁣⁣⁣

Instructions

  1. Combine rolled oats, coconut milk, desiccated coconut, maple syrup and vanilla essence in a glass or jar.
  2. In a small bowl, mix together melted coconut oil, cocoa powder, maple syrup and vanilla essence. Pour over the top of overnight oats, cover and refrigerate overnight (or for a minimum of 4 hours).
  3. Once set, serve and enjoy!
