I’m Nicola, an Aussie-born photographer, adventurer and foodie.
I took my first overseas trip to Cambodia at the age of 15 and my restless feet haven’t been able to stay in one place since. After high school, I abandoned the conventional path of going to university and getting full-time job. Instead, I decided to pursue my passion for travel and photography, and Polkadot Passport was born in 2014. In the six years that followed, I travelled to over 50 countries and managed to turn travel blogging into my full-time career.
I started this blog as a source of travel inspiration and information for adventurous souls. By sharing unique bucketlist experiences, comprehensive destination guides, travel photography tips and more, the goal of Polkadot Passport has always been to inspire people to explore the beautiful world we live in.
The Evolution of Polkadot Passport
In 2020, the dreaded pandemic hit. My life went from constant globetrotting to being perpetually housebound. The silver lining was that this time at home allowed me to discover my love for cooking. If I couldn’t physically travel to other countries, I figured I could still explore the world from the confines of my kitchen.
All of a sudden, I had the idea to cook one dish from each of the 196 countries in the world. I asked my best friend (and fellow foodie) Floss if she’d undertake the challenge with me, and she was crazy enough to agree. We spent the following year developing the recipes you’ll find on here, each one inspired by a different cuisine.
Now, Polkadot Passport is no longer a space just for globetrotters. It is also a place for adventurous home cooks who want to explore the world through cooking. Whether you are hopping on a plane or hopping into the kitchen, come and join my global adventures!
