It is no secret that I am a little obsessed with biscoff. From biscoff carrot cake cheesecake to biscoff waffles, I have integrated these delicious spiced biscuits into many of my recipes.

Today, I want to share a slightly healthier way to enjoy biscoff- in the form of biscoff protein balls! Combining biscoff cookies with high-protein walnuts, almond flour and almond butter makes for a delicious AND nutritious on-the-go snack.

What is Biscoff?

“Biscoff” is actually just the brand name used in the US and the UK for Speculoos. Speculoos is a sweet, spiced biscuit that was originally manufactured in Belgium.

How to make Biscoff Balls

These healthy biscoff bites are super easy to make, and come together in just 5 minutes!

  1. Mix together 1 tsp of cinnamon and coconut sugar in a small bowl and set aside.
  2. Blend together biscoff cookies, walnuts, almond flour, almond butter, maple syrup, vanilla essence and 1 tsp of cinnamon in food processor until combined.
  3. Use your hands to roll the mixture into balls. Roll each ball in the cinnamon sugar mixture, then place the balls into a sealed container. Put in the fridge or freezer to set for at least 4 hours before eating.

Ingredients for Biscoff Balls

BISCOFF COOKIES: You can use lotus biscoff cookies or any kind of speculoos cookies you can find.

WALNUTS: Feel free to substitute for another type of nut like almonds or pecans if you don’t have walnuts on hand.

ALMOND FLOUR: You can substitute for oat or coconut flour but do not use all-purpose flour.

ALMOND BUTTER: Once, again you can substitute for another type of nut butter however I wouldn’t recommend using peanut butter as the flavour will not go with the biscoff.

COCONUT SUGAR: Coconut sugar is a natural sugar with a lovely caramelized flavour so works really well with the biscoff. You can substitute for brown sugar or omit entirely.
